Welcome 2-13-08 through 2-19-08

Welcome!! I think we might have some more new people looking this week! I hope that you find this blog easy to understand and that you will find it helpful in your grocery planning, shopping, meal planning and that it will ultimately help you get your grocery bill/budget lower. I have been couponing for a long time and found that I have always saved money but it became more significant of a savings when I started meal planning in advance based on what was on sale and what I had coupons for.

I decided to add a brief explanation on the three stores' pages about their coupon policies. Things are always changing so I thought it might be helpful to keep this on each page and update accordingly. This week- or month- it seems that Harris Teeter is changing its coupon policies. Harris Teeter has been my favorite grocery store for 10 years because they were coupon friendly and had great sales. Lately, I have had more savings at Lowes Foods.

In the past, I have always gotten my bread at Aldi. When I first started shopping there, the bread was .49 a loaf and now it is up to .69? I have not been impressed with the quality lately. I decided to go to the Flowers outlet in Jamestown this week to check it out. GO GO GO. Not beautiful but let me tell you I am never going to Aldi again for bread. I got loaves of Natures Own for .69 a loaf. It was so soft and fresh I ate 4 slices when I got home. I priced the same loaf at Teeter and it was 2.39!! I got the double fiber which meant that I could eat more for my weight watchers points. They had all sorts of bread and they were all CHEAP. I can't say enough. It is right on Main Street in Jamestown.

If anyone who lives in Greensboro still does not get a Sunday paper, let me know if you want a cheap subscription and I can help you get one. If you live outside of Greensboro, Walmart will sell the Sunday edition for .75 but if you live in GSO I can get it cheaper than that.

Lasagna: don't be scared, this is SOOOOO easy
1 container (15 oz) part skim Ricotta cheese
2 1/2 cups mozzarella cheese, divided
1/2 cup parmesan cheese, divided
1/4 cup chopped fresh parsley
1 egg, slightly beaten
1 jar (26 oz) spaghetti sauce
1 lb ground beef (I use turkey) browned, drained
1 cup water
12 lasagna noodles, uncooked
Preheat to 350. Mix ricotta cheese, 1 1/4 cups of the mozzarella cheese, 1/4 cup of the parmesan cheese, parsley and egg until well blended; set aside. Pour spaghetti sauce into meat in skillet. Pout water into empty sauce jar; cover and shake well. Pour into skillet; stir until well mixed (This will yield about 5 cups sauce) Place 1 cup of meat sauce on bottom of 13 x 9- inch baking dish. (This way the noodles will not stick to the pan) Layer 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup meat sauce. Repeat layers 2 more times. Top with remaining 3 noodles and sauce. Sprinkle with remaining 1 1/4 cups mozzarella cheese and 1/4 cup parmesan cheese. Cover tightly with greased aluminum foil. Bake 45 minutes or until cooked through. Remove foil and bake an additional 15 minutes or until bubbling. Let stand 15 minutes before cutting for easier serving. I am serving with garlic bread and the garlic broccoli (see below recipe).

Pasta with Shrimp, Tomatoes and Corn:
8 oz bow-tie pasta
1/2 lb green beans, cut into 1 1/2-inch long pieces (I will use 1 bag of the Steamfresh green beans that are on sale)
1 lb med shrimp, peeled and deveined (just steam them until pink and shell)
1 (14.5 oz) can diced tomatoes, drained
1 (7 oz) can corn drained (another bag of Steamfresh but corn this time)
2 tbsp olive oil
salt and pepper
Prepare pasta according to pkg directions and drain (save about 1 cup of the water). Add green beans to pasta. Mix shrimp, tomatoes and corn in a pan. Add oil; season with salt and pepper. Bring to a simmer (med to med-low heat), then cover and set aside. Toss pasta and beans with shrimp mixture; if pasta looks dry, add reserved water in 1/4 cup increments until desired consistency is reached. Season with salt and pepper. (I plan to steam my shrimp with Old Bay seasoning)

Broiled Chicken with Corn-Pinapple Salsa:
6 medium (4 oz ea) skinless, boneless chicken breast halves
1 can (15.25 oz) whole kernel corn, drained
1 can (8 oz) crushed pineapple in its own juice, drained
1/2 cup chopped green and/or red sweet pepper
1/4 cup chopped fresh cilantro
1 jalapeno pepper, seeded and finely chopped
pepper to taste
Rinse chicken; pat dry. Season with pepper. Place on unheated rack of broiler pan. Broil 4 inches from het for 10-12 minutes or until no pink remains; turn once. Meanwhile, stir together corn, pineapple, sweet pepper, cliantro and jalapeno in medium bowl. Serve with chicken. Garnish with additional cilantro and jalapeno peppers if desired. You can substitute 6 medium (4 oz ea) salmon fillets for the chicken.

Easy Broccoli Cottage Bake:
1 container (16 oz) Low Fat cottage cheese
1 pkg (10 oz) frozen chopped broccoli, thawed, well drained
3/4 cup shredded sharp cheddar cheese
1 jar (7 oz) roasted red peppers, well drained, chopped (make your own)
4 eggs, beaten
3 tbsp each parmesan grated topping and plain dry bread crumbs
Preheat to 350. Mix all ingredients until well blended. Pour into a 9-inch pie plate sprayed with non-stick cooking spray. Bake for 45 minutes or until center is set. Let stand 10 minutes before cuting into slices to serve. I will probably serve with the Asparagus with Hollandaise Sauce.

Easy Bacon Pie:
12 slices bacon, cooked and crumbled
1 cup shredded swiss cheese (I like cheddar better)
1/3 cup chopped onion
1/2 cup Bisquick
1 cup milk
1/8 tsp pepper
2 eggs
Preheat to 400. Grease pie plate/pan. Sprinkle bacon, cheese and onion into pie pan. Stir remaining ingredients together and pour into pan. Bake 35-40 minutes or until center is set. I will serve with a salad and a veg.

Beef-and-Rice-Stuffed Peppers:
6 medium bell peppers, tops removed and reserved, and seeds removed
1 tbsp olice oil
1 yellow onion, diced
1 large carrot, peeled and diced
1 stalk celery, diced
2 cloves garlic, minced
8 oz lean ground beef or turkey
1 tsp salt
1 tsp pepper
1 (14.5 oz) can diced tomatoes
1 cup cooked brown rice, or white
1 cup grated Monterey Jack cheese
Preheat to 375. Bring a large pot of water to a boil. Once boiling, add peppers and pepper tops and cook until tender, 6 to 7 minutes. Remove peppers from water and invert to drain fully. Make filling: Warm olive oil in a large frying pan over medium-high heat. Add onion and cook, stirring occasionally, until translucent, about 4 minutes. Add carrot, celery and garlic and continue cooking until vegetables are just softened, 4 minutes longer. Add beef, salt and pepper and cook, breaking up large chunks, until meat is no longer pink, about 7 minutes. Add tomatoes and rice and cook 5 minutes longer. Stir in 3/4 cup cheese. Fill peppers with meat mixture, dividing evenly. Sprinkle mixture with remaining cheese and top with pepper lid. Bake until cheese is melted and peppers are heated through, about 5 minutes. Serve hot.

Tasty 2-Step Chicken:
1 tbsp veg oil
4 skinless, boneless chicken breast halves
1 can (10.75 oz) condensed cream of mushroom soup
1/2 cup water
Heat the oil in a 10-inch skillet over med-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken and set aside. Pour off any fat. Stir the soup and water into the skillet. Heat to a boil. Return the chicken to the skillet and reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through. I will serve with the Parsleyed Noodles and the Roasted Broccoli with Garlic

Chili Salmon: this is not on sale but a certain friend wants some fish recipes on here!
2 6 to 8 oz slamon fillets
1/4 cup finley chopped pistachios
1/3 cup chili sauce
1 tbsp minced garlic
1 tsp chili powder
1 finely chopped scallion
1 tsp hot sauce
Season each fillet with salt and pepper. Blend the pistachios, chili sauce, minced garli, chili powder, scallion and hot sauce together. Spoon the chili mixture on top of the salmon. Bake on parchment lined tray at 325 for 15 minutes.

Asparagus and Hollandaise Sauce:
1 to 2 lbs asparagus
1/2 cup light mayo (recipe from Kraft so they reccomend Kraft Light)
1/2 cup plain nonfat yogurt
1 tsp yellow mustard
1 tsp lemon juice
Steam asaparagus until desired tenderness and set aside. Cover to keep warm. I like mine soft soft.
Mix all ingredients in saucepan. Cook on low heat 5 minutes or until heated through, stirring constantly. Serve over hot steamed fresh asparagus. Can also serve over hot sugar snap peas or broccoli. Can garnish with fresh parsley or finely chopped red peppers.

Roasted Broccoli with Garlic:
3 tbsp unsalted butter
2 cloves garlic, finely chopped
1 lb broccoli florets
3 tbsp olive oil
salt and pepper
1/4 cup pine nuts
Preheat to 425. Melt butter in a small saucepan over low heat. Add garlic and cover; set aside off heat. Place broccoli in a large bowl and toss with olive oil, salt and pepper. Spread broccoli out in a single layer on 2 large rimmed baking sheets. Roast, stirring often, until softened and lightly browned on edges, 20 to 25 minutes. Meanwhile, place pine nuts in a large skillet. Toast over med heat, stirring and tossing often, until golden brown, 3 to 5 minutes. Transfer to a small bowl to cool. Transfer broccoli to a large bowl and pour on butter and garlic mixture. Season with salt and pepper. Toss with pine nuts just before serving.

Parsleyed Noodles:
1 (12 oz) pkg med or wide egg noodles
3 tbsp unsalted butter, softened
1 onion, chopped
1/4 cup chopped fresh parsley
salt and pepper
bring a large pot of salted water to a boil. Add noodles; bring back to a boil and cook, stirring often, until tender, 5 to 7 minutes. Melt butter in a small saucepan over med-high heat. Add onion and cook, stirring, until softened but not browned, 3 to 5 minutes. Stir in parsley and remove from heat. Drain noodles, reserving 1/4 cup cooking liquid. Return noodles to pot and stir in butter-onion mixture. Season with salt and pepper. If noodles appear dry, add reserved cooking liquid 1 tbsp at a time. Serve hot.

Peanut Butter Oat Bites:
2 tbsp unsalted butter
2/3 cup creamy peanut butter
1/4 cup confectioners' sugar
3 tbsp honey
1 tsp vanilla extract
1 1/2 cups Rice Krispies cereal
1 cup quick oats
1/4 cup raisins
1/4 cup mini chocolate chips
1/4 cup finely chopped lightly salted dry-roasted peanuts
Melt butter in a med saucepan over med heat. Remove pan from heat and stir in peanut butter, confectioners' sugar, honey and vanilla. Stir in Rice Krispies and oats and allow mixture to cool. Stir in raisins and chocolate chips. Form mixture into 1-inch balls, then roll each ball in chopped peanuts, pressing to coat. Store in refrigerator.

Harris Teeter Deals 2-13-08 thru 2-19-08

Harris Teeter basic coupon policy: they will double up to .99 face value coupons, 20 per order, will take 2 IP (internet printable) per order, BOGO items will ring up half price and you used to be able to you 2 coupons for BOGO deals but in recent weeks I am having trouble with this-- I suggest splitting orders and separate every BOGO deal of one per order so that you can use your coupons, if something is out of stock-get a raincheck because theirs are good forever, they will honor competitors' coupons, they are great for marking down meats and breads with their own in-house coupons and you can then stack a mfg coupon on top of the store coupon, you need a Vic card and if you register it with their home page on the internet you will be eligible for weekly in-house deals that will come of automatically without any coupons. I love Harris Teeter- several times a year they will have triple coupons and you can use 20 per day with a face value up to .99.

Deals:

#1: Remember that Harris Teeter now takes competitor's coupons and you can use the 2.00 off Bakery and/or Produce Food Lion coupons. This could be a real deal maker if you get the asparagus, strawberries, peaches and bell peppers on the clearance rack and other clearance produce. Everytime I have gone into a Teeter this past week I have found bell peppers 2 for 1.00 on the clearance rack and am finding tomatoes, pears, oranges, apples, a pineapple. Everytime I have gone into Teeter, I have also found lots of reduced breads. Today I got a 4pk of sub rolls for .29-crazy.

#2: Check out the meat markdowns. I am noticing a consistent markdown everytime I go in. Today they were marking down bacon. I got a pack of turkey bacon that was 4.99 for .99- I was sad that I did not have a mfg coupon with me but grabbed it anyways. If I don't make omlets for dinner, I am going to throw it into the deep freezer for later use. They also were marking down chicken and steaks.

Lowes Foods Deals 2-13-08 thru 2-19-08

Lowes Foods basic coupon policy: they will double coupons whose face value is .99 and under. They will honor competitor's coupons but I have had trouble with the Lowes on the corner of Piedmont Pkwy and Guilford College staying true to this new policy. You need their greencard to get the sale prices. Occassionally- several times a year- they will have their triples and will triple mfg coupons. When I catch wind of a triple, I will try to warn you because the more organized you are, the more you can get for your money. They will accept IP (internet printables) and it depends on the cashier as to how many. Their formal policy is 2 per order but I have had cashiers who let me use more than 5 in one order. Their BOGO (buy one get one free) will ring up half price and they will let you use a coupon for each item in the BOGO deal. They changed their policy within the last six months-they used to have minimums before coupons would double. They are slowly becoming my favorite store because they are becoming more coupon friendly than Harris Teeter.

Deals:

#1: Use the Food Lion 2.00 off 5.00 coupon in produce when you buy your asparagus, bag salad, bananas. You can also use the Target coupon (also found on www.afullcup.com) for .50 off 2 lbs of bananas. You might even be able to get free bananas if you use the Target coupon for the ripe bagged bananas.

#2: Be on the lookout for "Manager's Specials" in the meat section. I was at the Lowes on Old Oak Ridge Rd and they had like 100 package of those tiny cocktail smokies on sale for 1.00 a package. The regular price was 3.99. I got two packs and tossed them into the freezer for later use.

#3: There is a catalina (the red coupon that prints at the register) deal. Green Giant is the product that is triggering the catalina coupon. When you purchase 3 boxed Green Giant frozen vegetables, you will get a coupon for 1.00 OYNO (off your next order). If you buy 4, you get a $2.00 OYNO. If you buy 5, you get a $3.00 OYNO. These are great deal makers. Purchase the vegs with mfg coupons and then a double play is saving on your next order. You CAN immediately use on a second order than has another round of boxed vegs and you will generate another catalina coupon. This is called a chain. I will do this as long as I have mfg coupons for the vegs. The best scenario was to have gotten a raincheck for the vegs 2 weeks ago when they were on sale 10 for $10 but who knew that this was coming. This deal is good until 2/24.

#4: Another catalina deal: Kraft salad dressing. Again, buy 3 bottles in one transaction and get a catalina coupon for 1.00 OYNO. Buy 4, get a $2.00 coupon. Buy 5, and get $3.00 coupon. I know there are some mfg Kraft coupons out there but you have to decide if the deal is good for you.

#5: Buy 4 boxes of any General Mills cereals and you get an instant free gallon of milk. To maximize the deal, I would buy 2 boxes of Trix that are on sale for 2/5. I would use 2 IP coupons for .55/1, so each box would end up costing 1.40 each. I got the Trix coupons from www.coupons.com. I would then buy 2 boxes of any of the other GM cereals that were on sale 2/5 and use a .75/2 coupon, making them 1.75 a box. So final cost would be 6.30 for 4 boxes of cereal and one gallon of milk. Pretty good.

#6: There is a green TMF hangtag on specially marked bottles of Heinz 57 w/Lea & Perrins. This hangtag is what you fill out and send in and they will send you a full refund. To make the deal sweeter, use a mfg coupon when you initially buy the bottle and you will end up making money off the deal! I cannot find a mfg for this but I am sure there is one from the past couple of months- I don't eat this stuff so I am sure I just tossed it.

#7: I spotted more of the tobasco sauces with the free coupons on them.

#8: Remember that Lowes accepts competitor's coupons, including their IP ones (MINUS the Lowes at Piedmont Pkwy) and that you can use the 2.00 off 5.00 Produce and Bakery coupons from Food Lion.

Food Lion basic coupon policy: face value only, accepts internet printable coupons, BOGO items will ring up half price and they have no issues with using coupons on each of the BOGO items, you need the MVP card to get their sale prices. They have their own store internet coupons that can be either found by registering your MVP card at the Food Lion homepage and they will weekly email them to you or you can go to www.afullcup.com and print up your own. Food Lion is not my favorite grocery store but I will go in there for the loss leaders and to look for beer rebate forms which they are the best at having in stock in the Greensboro area.

#1: Buy 2 of the Lysol Disinfecting Wipes. Send off for the $5.00 rebate when you buy 2 Lysol products and have a receipt for a visit to the Pediatrician. If you participated in this last year, you can again. They must be offering this deal every cold and flu season. If you have no idea what rebate I am talking about, go to the Lysol website www.lysol.com and you will be able to print up the official rebate form to submit. Good deal if you have sickly kids like me and are constantly at your doctor's office.

#2: Food Lion carries a brand of salsa that I can find nowhere else: Spike Santa Fe Salsa. There is a satisfaction guarantee that it is the "World's Best Tasting Salsa".
